Cornbread redefined! It’s
almost a sandwich studded with chunks of ham and bright green
broccoli. It’s so easy. It starts with prepared mix so even
the kids could whip this one up.

Ingredients:
8 oz. cornbread mix
1 medium onion, chopped and sautéed
2 egg whites, lightly beaten
1/2 C skim milk
3 T olive oil
1 C creamed corn
1 C. low fat cheddar cheese
Dash red pepper
1 t chili powder
2 C Andy Boy broccoli, cooked, drained and chopped
2 C lean ham (or smoked turkey) finely diced
Salt and freshly ground black pepper

Directions:

Preheat oven to 375 degrees. |

Cook onions until tender with nonstick
spray. |

In large bowl, mix cornbread mix, onions,
beaten eggs, milk, olive oil, cream corn, cheese, red pepper,
chili powder, Andy Boy broccoli, ham, season with salt and pepper. |

Blend well. Pour into 9 x 13 pan (spray
with non-stick spray). |

Bake for 30-35 minutes. |
