An unusual cookie, slightly
pink and chunky with cactus pear fruit, nuts and cherries.
Ingredients:
1/2 C butter
3/4 C brown sugar
3/4 C sour cream
1 egg
1 t vanilla extract
11/2 C all-purpose flour
1 t baking soda
1/4 t salt
1/4 C Andy Boy cactus pear juice
1/4 C chopped Andy Boy cactus pears
1/4 C chopped maraschino cherries
3/4 C chopped pecans
Directions:
1.
Preheat oven to 375 degrees.

Cream together butter and sugar.
3.
Blend in sour cream, egg and vanilla
extract.
4.
Mix dry ingredients and blend into sour
cream mix. Add Andy Boy cactus pear juice, cherries and Andy
Boy cactus pears.
5.
Drop mix with a tablespoon onto greased
cookie sheet and bake for 15 to 18 minutes.
