Cactus Pear Sorbet
This sorbet is a great dessert option for dinner parties. It uses three ingredients, sweet cactus pear, sugar, and fresh lime juice to balance out the sweetness. Make a batch for adults and add 2 ounces of tequila for a more adult friendly dessert.

- 3 3/4 cups cactus pear, chopped
- 1/2 cup lime juice
- 3/4 cup granulated sugar
1. Add the cactus pear, lime juice and granulated sugar to a blender, and blend until smooth. Pour the mixture into an ice cream machine and churn for 20 minutes. Pour the sorbet into a freezer safe bowl, then let freeze overnight, or at least 8 hours. Garnish with a lemon twist or slice of cactus pear.
