Next-Level Baby Gem Cobb Salad
We’ve elevated this classic salad by adding roasted beets, radishes and sunflower seeds.

                Ingredients
- 3 heads Andy Boy Baby Gem Lettuce, washed and chopped
 - 2 soft-boiled eggs, halved
 - 1 cup rotisserie chicken chunks
 - 1 roasted beet, peeled and cut into wedges
 - 6 radishes, quartered
 - 1 half avocado, sliced
 - 3 slices bacon, cooked and roughly crumbled
 - 2 Tablespoons crumbled blue cheese
 - 1/8 cup roasted sunflower seeds
 - ½ cup vinaigrette
 
Directions
1. Split lettuce amongst two medium serving bowls.
2. Arrange ingredients on top in separate piles. Drizzle with vinaigrette.
