Broccoli Ham Cornbread

Cornbread redefined! It’s almost a sandwich studded with chunks of ham and bright green broccoli. It’s so easy. It starts with prepared mix so even the kids could whip this one up.


8 oz. cornbread mix
1 medium onion, chopped and sautéed
2 egg whites, lightly beaten
1/2 C skim milk
3 T olive oil
1 C creamed corn
1 C. low fat cheddar cheese
Dash red pepper
1 t chili powder
2 C Andy Boy broccoli, cooked, drained and chopped
2 C lean ham (or smoked turkey) finely diced
Salt and freshly ground black pepper


  1. Preheat oven to 375 degrees.
  2. Cook onions until tender with nonstick spray.
  3. In large bowl, mix cornbread mix, onions, beaten eggs, milk, olive oil, cream corn, cheese, red pepper, chili powder, Andy Boy broccoli, ham, season with salt and pepper.
  4. Blend well. Pour into 9 x 13 pan (spray with non-stick spray).
  5. Bake for 30-35 minutes.
