Balsamic Glazed Brussels Sprouts w/ Pomegranate Seeds

These #AndyBoy balsamic glazed brussels sprouts with pomegranate seeds is the perfect side dish for any holiday festivity. They’re crispy, sweet, tangy, and will even look beautiful on the table!

Ingredients

1 bag Andy Boy brussels sprouts

3 tbsp. olive oil

4 cloves garlic, minced

1 tsp. salt

1/2 tsp. pepper

1/3 cup balsamic vinegar

1/2 tsp. fresh thyme

2/3 cup fresh pomegranate seeds

Directions

  1. Preheat oven to 400°F, line a baking sheet, and halve the brussels sprouts
  2. Add the oil, garlic, salt, and pepper to a bowl and whisk to combine
  3. Add the brussels sprouts halves to the mixture and toss to evenly coat
  4. Place brussels sprouts cut side down on the sheet pan and roast for about 20-25 minutes or until they are nicely browned
  5. After the brussels are finished roasting, scoop them back into the bowl and drizzle the balsamic glaze overtop (use store bought or make your own)
  6. Place them back on the sheet pan, cut side up, and sprinkle with fresh thyme. Roast for another 5-10 minutes.
  7. Remove from the oven and transfer to a serving dish. Add the pomegranate seeds and toss to combine.
  8. Serve and enjoy!
